Since the beginning of the International Contest of Note by Note Cooking, students of DIT participate to the competition.
Fourteen M.Sc. students and one Ph.D researcher are currently taking the 12 week Advanced Molecular Gastronomy module at the Dublin Institute of Technology. The assignment for the module fulfils the topic for the fourth International Note by Note competition. The students will produce between 1 to 3 Note by Note dishes using cellulose or a derivative of cellulose and also trigeminal compounds. Following a demonstration of how to produce a Note by Note dish, students will start to develop recipes and create their own Note by Note dishes. The student with the best dish(es) will be selected to enter the Fourth International Note by Note competition.
