The Sixth International Contest for Note by Note Cooking is now on

For the 6th International Contest for Note by Note Cooking, the topic is expressed in this expression "But the crackling is superb".

Indeed, this is the title of a book published by Nicholas and Giana Kurti, in 1988, with contributions of Fellows of the Royal Society about food and cooking. The title was given after Nicholas Kurti served a pork roast that was injected with fresh pineapple juice before cooking, in order to tenderize the meat. The French chef Georges Roux was invited to test it, and he said that the meat was not great "but the crackling is superb".

Indeed, any contribution should include some crispiness, or crackling, and the more "pure note by note" dishes will be the better.
